White Sea Bass from Cooperativo Ortega Cruz being served at Lodge at Torrey Pines in La Jolla, CA.

White Sea Bass

White Sea Bass, Atractoscion nobilis, is not technically a sea bass, but actually the largest member of the Croaker family in the Pacific Ocean (up to 5 feet and 80lbs). It feeds midway up the water column on bait fish, squid and pelagic crabs. It can be found from Magdalena Bay, Baja California, to Juneau, Alaska. They usually travel in schools over deep rocky bottoms (0-122 m) and in and out of kelp beds. It has an elongated body, large mouth, and a raised ridge along the length of its belly. It is grey-blue to copper on its back, with dark specks on its sides and a silver belly.

Ortega Cruz runs a co-op of artisan fishermen located along the Pacific coast of Baja. Working together, these fishermen catch fish using traditional hand lines and low-impact hand-drawn nets from small, open panga boats that are beach-launched daily. His co-op consists of 30-40 pangas and 2-3 fishermen per each boat.
